Tortilla Soup

  • 1 grilled chicken breast shredded
  • 4 cups organic or homemade chicken broth
  • 1 tbsp extra virgin oil oil or grapeseed oil
  • 1/2 tsp sea salt (optional)
  • 1/2 tsp black pepper
  • 1/3 tsp cumin
  • 1/3 tsp coriander
  • 15.6 oz canned, crushed organic tomatoes
  • 1/2 cup of corn
  • 1 red bell pepper
  • 1/2 cup diced onion
  • 1/2 Cup chopped celery
  • 1/2 cup sliced carrots
  • 1 cup quinoa
  • 2 tbsp chili powder
  • 1 tbsp cayenne pepper powder
  • 2 cloves of garlic (minced)

For serving:
Crispy blue corn tortillas
Avacado
Lime wedges
Cilantro
